Summer is here and that means camps, campfires and s’mores! The catch is that although we are vegetarian and not vegan, there are things that I still try to avoid, gelatin being one of them. Gelatin is made by boiling down the cartilage and bones of animals. It’s hard to do that without first killing the animal, which is why I do my best to avoid foods containing it such as jello and, unfortunately, marshmallows.
Looking for a way to have my s’mores and eat them too I went looking online and I found this great recipe and gave it a couple Crunchy updates for my first go around. ** You will need a mini muffin tin for this recipe.
Crunchy Mama S’mores Bites!
Ingredients:
1 cup graham cracker crumbs (organic if you can find it)
1 1/4 cups organic unbleached all-purpose flour
1/2 tsp. baking soda (aluminum free)
1/2 tsp. salt
1/2 cup unsalted organic butter, softened
1/2 cup organic coconut palm sugar
1/3 cup organic granulated sugar
1 large organic free-range egg
1 tsp. organic pure vanilla extract
Marshmallow Fluff (dye free and gelatin free in place of vegan marshmallows)
Ghirardelli dark chocolate chips
Directions:
1. Preheat oven to 300 degrees.
2. In a large bowl, combine graham cracker crumbs, flour, baking soda and salt. Set aside.
3. In another bowl, beat together butter and sugars until creamy and smooth. Add the egg and vanilla, mix until combined.
4. Slowly add dry ingredients to wet. Scrape down bowl and stir with wooden spoon until it is all combined.
5. Drop by tablespoons into greased mini muffin tin. (I use coconut cooking spray.) Press dough in the muffin tin using your finger or something round to make a small indention in the dough. The dough will puff when baking so no need to be perfect.
6. Bake for 6-8 minutes, until edges are beginning to brown.
7. Remove from oven and place rounded teaspoons of marshmallow fluff into the center of each bite.
I used two large spoons to scoop and scrape which means my two sous chefs were able to enjoy them like a marshmallow pop when we were done. This was their favorite part of the process!
8. Allow them to cool completely.
9. Preheat your broiler.
Allow to cool completely or enjoy while they are still warm. Either way they are absolutely delicious! The cookie is soft and buttery, the marshmallow fluff melts in your mouth and the rich dark chocolate is the perfect compliment.
Happy Crunchy Eats!
